Thai Peanut Salad Dressing

Yeah, I got nothing…. except a recipe for Thai peanut butter salad dressing. Pretty yum stuff.

1/2 cup creamy peanut butter
1 lime-worth of juice and zest
2 1/2 tsp sesame oil
1/2 cup vegetable oil
2 Tbsp soy sauce
4 Tbsp honey
2 cloves garlic, minced
1 Tbsp minced ginger
1/2 cup minced cilantro (stems and all)
1/2 tsp salt
3-4 tsp sriracha chili sauce
2-4 Tbsp water

Add everything but the water in a food processor. Mix/chop/blend/process until it’s all nice and smooth, consistent and pretty much homogeneous. Add a little water to adjust the thickness, if necessary. Done. Serve it over a salad. Pretty good stuff.

Of course, you can add more sriracha chili sauce or ginger for a little more spice. Sriracha is a red Thai spicy sauce. I think most grocery stores have it for a few bucks. I have no idea what else to use it in, though, lol.
